Food Friday

Whet your palate on Food Friday from 2-3 PM,  as a wide variety of experts from around the region will answer questions about food, drink, and how to throw the best gatherings around.

Food Friday will focus on topics like seasonal veggies, quick and easy recipes, the homegrown movement, creating the perfect cheeseboard, juicing, mixology, and so much more. Supplemented by an interactive website, listeners and online viewers will also be able to get our weekly recipes, restaurant updates, restaurant week postings and reviews, and share their tips with others.

It’s Food Friday again! Today we’re talking about catering your next party, large or small. Kim Klopstock of Lily and the Rose Gourmet Catering in Saratoga Springs is here with us, along with Bruce Kazan of Main Course Catering in New Paltz. We are also joined by Yono’s Restaurant co-owner and certified sommelier Dominick Purnomo.

Apple Chop Chow

Ingredients

1 Cortland Apple

For vinaigrette

½ cup rice vinegar

3 tablespoon sugar

½ teaspoon red chili

1 ounce water

Preparation

1. Shave apples thinly into small julienne.

2. Mix ingredients for vinaigrette.

Ingredients

1 cup bread flour

1 cup wild hive polenta, fine grain

¾ teaspoon sea salt

½ teaspoon baking soda

½ cayenne pepper, seeds removed finely diced

½ cup cheddar cheese

2 ½ tablespoons cold unsalted butter cut into small pieces

¾ cup buttermilk shaken to blend

Mixture for Dry Cure

3 ounces sugar

2 ounces kosher salt

1 teaspoon coriander

2 each star anise

1 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon garlic powder

3 medium celery roots, peeled and diced

1 cup milk

1 cup heavy cream

2 tablespoons butter

White pepper

Salt

1 tablespoon horseradish

Ingredients

3 pounds braising beef, chuck, shin or top round 

4 cups red wine

½ cup hoisin sauce

¼ cup soy sauce

¼ cup sesame oil

2 carrots, large chunks

2 celery, large chunks
